Muffins are an easy-to-make and attractive snack that you can bake with a group of friends to enjoy together or for a special occasion.

This recipe is for traditional English cupcakes.

Ingredients

  • 200 g softened butter
  • 1 teaspoon vanilla extract or vanilla sugar
  • 200 g sugar
  • 3 or 4 eggs
  • 200 g flour mixed with baking powder.

 

Recipe

Preheat the oven to 180°C.

Line the muffin pans with paper liners.

 

In a mixer, cream together the butter, vanilla/vanilla sugar, and sugar.

Add the eggs—one at a time*.

Gradually add the flour, stirring constantly.

If the batter seems too thick, add a little milk.

 

*You can beat the egg whites first and add them gradually to the batter—this will result in a lighter texture for the finished cookies. However, this makes it more difficult when baking in large batches.

 

Fill the paper liners 1/3 full with a teaspoon.

Bake in the oven for about 15–20 minutes.

Icing

STIFF ICING.

 

To make stiff frosting, you’ll need:

  • 200g butter
  • 400 g powdered sugar
  • a few tablespoons of milk

 

Recipe:

  • Beat the butter until soft
  • Add half the powdered sugar and beat until combined
  • Add the rest of the powdered sugar and beat until combined
  • If the mixture is too stiff, add a small amount of milk
  • To make colored icing, add the appropriate amount of food coloring.

 

REGULAR ICING.

 

To make plain frosting, you’ll need:

  • 200g powdered sugar
  • A few tablespoons of warm water

 

Instructions:

  • Mix the ingredients until smooth.
  • Add more powdered sugar or water if needed

 

If you want to flavor the frosting, you can use the following options:

  • Replace the water (or part of the water) with lemon juice
  • Add a teaspoon of vanilla extract or another flavoring.

Decoration

Decorate the muffins with whatever you have on hand:

  • fruit
  • almonds or coconut
  • colored candies
  • multicolored frosting
  • sprinkles, little roses, edible leaves, etc.

Muffin Specials

During the YS meeting. As part of team-building and creative activities.

You can bake muffins together with the group, or you can bring ready-made muffins and decorate them together with the group.

 

A congregation event where YS can contribute by bringing homemade muffins.

 

Muffins can be part of a fundraising campaign for a selected YS project.

 

The muffins can be used as a creative invitation to a meeting organized by the church or a YS group.
